For these cold winter nights curl up near the fire and eat served warm with a good glug of cream and washed down with a mug of your favourite boozy coffee. This is my favourite version of the traditional recipe, and it is slightly more wholesome, containing apples and lemon juice, but it is still as satisfyingly sticky and sweet.

‘Tis the season to be jolly. Here at cherry pippin we’re keeping it jolly simple and offering the thing we love the most and do the best…mince pies! Made using traditional beef suet and filled to the brim with dried fruit, spices and brandy these are rich and boozy. The best way to eat them I think is with the really best, thickest Jersey cream to melt through the zingy fruitiness.

When we ran our market stall these were one of our best-sellers. People all over the world have their own version of meringues. It seems that every culture appreciates the fantastic result you get when you whisk air into egg whites and add lots of sugar.

Cherry pippin’s meringues at their simplest are light and fluffy and just off pure white. The exterior, crisp and yielding, the centre soft and chewy.

During the summer we would go fruit picking in Kent, Berkshire or Buckinghamshire and had lots of fruits in abundance which we pureed up to mix in with the meringue before cooking. I think my favourite was red berries including the lesser-known tayberry as they turn a beautiful deep pinky red as they cook. But many fruits worked with success, including raspberries, damsons and blackcurrants.

I also think that nuts sprinkled on meringues work incredibly well, my favourites being chopped pistachios or flaked almonds.

the best brownies!

It was never my intention to spend too much time making the ubiquitous chocolate brownie but it seems the world has spoken. This was hands-down the biggest seller on the market stall with people from all over the globe reaching out for the gooey rich chocolate slabs. In many different languages with different pronunciations the word “brownie” still means the same thing and when it gets to 3 o’clock in the afternoon it’s the only thing that really lifts the spirits.

I don’t consider myself to be the bragging type but I heard it so many times that it must be partly true: this is the best brownie ever! I have always prefered a brownie with nuts in but on the market I always kept the nuts out as I wanted to reach to as many people as possible. I think this one works best with walnuts as the brownie is so rich and chocolatey and the walnuts are ever so slightly bitter.

Martin’s ultimate favourite thing in the world, I think, is marmalade. He’s now rather partial to a brownie from time to time, being a bit of a recent convert, and it follows that his very favourite brownie is the marmalade brownie! Though I do try and disuade him from eating it for breakfast with his morning coffee…
